Rooted in the seasons
Our menus are written by the calendar, not by habit. Each season we return to Victoria's growers, fishers and producers to understand what is at its peak — then we build around it. A dish exists because the produce demanded it, never the other way around.
This is slower, more deliberate cooking. It asks more of our team and our partners, but it is the only way we know to put something genuinely exceptional in front of a guest. Provenance is not a marketing line for us; it is the starting point of every plate we send.
